Menu planning

My mom and stepfather are joining Jeff and me for Thanksgiving this year. Mom and I are vegetarians, so there will be no turkey. We're going with Cornish hens, instead, though they just get bigger every year.

The menu:
  • Lime Cornish hens (butter under the skin, lime slices on the skin, stuffed with a whole pierced lime)
  • Chipolte mashed potatoes (red potatoes w/chilies in adobo sauce)
  • Sweet potatoes with orange (cold w/spring onions & fresh orange juice)
  • Chili plantains
  • Kale with onion (steamed w/garlic)

Appetizers will be candied chili nuts (mixed nuts w/chili powder, honey & butter, toasted in oven) and this goat cheese salsa thing with chili lime tortilla chips. Yeah, we're going with a Caribbean theme. How'd you guess? :)

Dessert will be over at my in-laws. Mom's bringing pumpkin pie and my auntie Mo's pecan pie. Yum!
