Fresh tomato lemon sauce

For my stepfather, who has recently had to go on a low-sodium diet. After shopping with my mom this weekend and seeing how much sodium is in stuff, especially pasta sauce, I decided to see what I could make on my own. I came up with this.

1 Tbsp olive oil
1 small white onion, chopped
2 red sweet peppers, chopped
1 lb tomatoes, chopped
3 cloves garlic, minced
1 Tbsp fresh sage, minced
1 Tbsp fresh flat-leaf parsley, minced
1/2 tsp fresh-ground black pepper
1/4 tsp crushed hot red pepper flakes
1 tsp lemon juice
  1. Heat olive oil in medium saucepan over medium heat. Add onions and cook until they become transparent.
  2. Add red peppers and cook until they begin to soften.
  3. Add all remaining ingredients except for lemon juice. Reduce heat to low and cook until reduced by half (about 40 minutes), stirring frequently.
  4. Turn off heat and stir in lemon juice.
This is even better the next day. Enjoy, Lloyd!

Jess-we tried your recipe last night. It was wonderful! It was a bit spicy for Lloyd. (wuss), but perfect for me. Next time we’ll add the red pepper flakes at the table.

Oh-and you know how it is with recipes--half the fun is modifying them. We may try balsamic vinegar instead of lemon juice one of these times. Perhaps rosemary or basil in place of /in addition to the thyme and parsley? And maybe add some of those wonderful sodium-free Penzey's
Spices
.

Lloyd thanks you for your thoughtfulness and creativity!
