Sweet Potato Croquettes

Ingredients
1 slice bread, toasted
1 cup sweet potato, roughly chopped
3/4 cup red onion, roughly chopped
1/4 cup fresh flat leaf parsley
1 tsp minced garlic
1/2 tsp salt
1/4 tsp fresh ground black pepper
1 egg
Directions
  1. In food processor, process toast until it's crumbs.
  2. Add remaining ingredients and process thoroughly.
  3. With hands, make eight patties and place them on a lightly oiled baking sheet.
  4. Bake in a 350° oven for twenty minutes.
  5. Flip croquettes gently and bake for another ten minutes.
(I'm still working on a dip/sauce to go with this.)

Serve with your favorite balsamic vinagrette.

I very much like the herb salsa dipping sauce Claim Jumpers uses on their cheesy potato cakes.

Herb Ranch Salsa
1/2 cup sour cream
1/4 cup diced seeded tomatoes
2 tablespoons minced onions
1 tablespoon white vinegar
1 teaspoon minced fresh cilantro
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon dried dill

I was thinking you could keep the dipping sauce simple: maple syrup. :)

Both sound good, but I discovered that a simple balsamic vinagrette is just about heavenly with it! Yum!

I tried these last night, with the addition of about a tablespoon of brown sugar (because I'm a sweet tooth). AND I was short on time so I fried them gently in some olive oil and let them drain on paper towels. I thought they were great. Keven tried one and politely gave me his. The girls tried theirs. Kinda.

So I have five croquettes left for myself :)
