Squash not-quiche

I had a bunch of random leftovers in my fridge and needed to make something for dinner. I came up this this yumminess.

1/2 cup cooked squash, finely diced
1/2 cup cooked rice
1/4 cup scallions, finely sliced
1/4 cup fresh cilantro, chopped
1/2 tsp salt
1/2 tsp curry powder
2 eggs, beaten
  1. Mix together all ingredients, except for eggs.
  2. Add in eggs and mix well
  3. Pour into a lightly oiled dish and bake at 350° for 15-20 minutes or until done.
Yum!
