Polenta!

I like polenta. It's super-easy and accepts all sorts of flavors, either during or after cooking. Plus, you can mold it into whatever shape you want. In my case, a couple of stars in my baby silicone bakeware and some roundish shapes brim bowls (extra went in the freezer).

I found I had half a package of instant polenta (because I'm lazy, thank you) in the pantry, so last night, while Jeff was having dinner with a friend, I quickly cooked some up and had a wonderful meal. So wonderful, in fact, that I pretty much duplicated it for lunch today. :)



There's a polenta star (you can kind of see one of the points, if you look closely) topped with light boursin, peppers, broccoli raab, slow-cooked onions, and creamy pesto sauce; sourdough heart toasts with lovely light Laughing Cow; steamed carrots with balsamic vinegar; and yogurt with homemade candied cranberries for dessert.

It's kind of too bad you can't see how cool the polenta star looked like from the side. Oh well. It was pretty tasty!

It's lunch. I'm stuck at the Cube Farm and all of these food posts are making me drool...I may get electrocuted from drool on keyboard...Gross, I know.
