Odds & ends lunch

We had lots of little leftovers in the fridge - the kind that will migrate to the back, never to appear again until you find you no longer have any room and clean out the fridge. So they're in today's lunch.

Spinach salad with tomatoes & pinenuts, steamed carrots with sallot pepper, roasted squash with cheese and salsa, and a potato croquette with sweet chili sauce.

I found the croquettes at the Asian market and they're wonderful!
