Balsamic Mashed Sweet Potatoes

Ingredients

4 medium sweet potatoes
1 Tbsp butter, melted
1/4 cup cream
1/4 cup balsamic vinegar
Salt to taste

Directions

1. Scrub, but don't peel, sweet potatoes. Chop and boil in medium pot, just covered with water, until soft.
2. Put potatoes and remaining ingredients in food processor and process until smooth.
3. Add salt to taste.

Also a tasty filling for little turnovers. Adding walnuts is also good.
