Nuevo Beans & Rice
This is a nuevo Cubano dish inspired by a trip to a fantastic Cuban
restaurant in Manhattan Beach,
CA, called Little
Havana. Serve this with Golden Chicken
(or Tofu), Lime-Tomato Relish,
and Mango-Rum Puree over vanilla
ice cream for dessert.
Ingredients:
1 cup canned black beans, drained and rinsed
1 1/2 cup cooked Texmati rice
3 spring onions, sliced thinly
1 Tbs cilantro
1/4 cup freshly squeezed lime juice
1 Tbs olive oil
2 cloves minced garlic
salt and pepper to taste
Directions:
- Mix beans, rice, onions, and cilantro together
- Wisk together remaining ingredients and pour over rice &
beans
- Serve hot
