Curried Garbanzo Salad

A quick make-ahead salad with a bit of spice to it.

1 can garbanzo beans
1 cup red cabbage, shredded
1 orange or yellow sweet pepper, diced
1/2 cup tomato, diced
3 scallions, thinly sliced
3/4 cup Greek non-fat plain yogurt
1 1/2 tsp. curry powder
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp pepper

  1. Drain and rinse garbanzo beans and put in medium bowl.
  2. Mix together remaining ingredients with garbanzos and refrigerate for at least an hour.

Greek yogurt is thick, creamy, and has a lemony tang to it. If you can't find Greek yogurt (Trader Joe's carries it), use 1/2 cup regular non-fat plain yogurt and add 1/2 tsp. of lemon juice.
