A quick make-ahead salad with a bit of spice to it.
1 can garbanzo
beans
1 cup red cabbage, shredded
1 orange or yellow sweet pepper, diced
1/2 cup tomato, diced
3 scallions, thinly sliced
3/4 cup Greek non-fat plain yogurt
1 1/2 tsp. curry powder
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp pepper
Greek yogurt is thick, creamy, and has a lemony tang to it. If
you can't find Greek yogurt (Trader
Joe's carries it), use 1/2 cup regular non-fat plain yogurt
and add 1/2 tsp. of lemon juice.
