Goat Cheese Pizza

Wonderful for using up the last bits of vegetables in the fridge.

1 package pizza dough mix
10 grape or cherry tomatoes, halved
2 oz. mushrooms, sliced
1/4 onion, roughly chopped
1/4 red pepper, roughly chopped
4 oz. goat cheese, crumbled
small handful fresh basil leaves, roughly chopped
olive oil
freshly ground salt & pepper

  1. Oil baking sheet and place tomatoes, cut side up, on sheet. Spray with olive oil, then season with pepper and bake in 250° oven or toaster oven for 45 minutes to an hour.
  2. Make pizza dough according to package directions
  3. Heat olive oil in frying pan over medium heat and saute mushrooms, onion and red pepper until soft.
  4. Top pizza dough with mushrooms, onions, pepper, and tomatoes, then top with basil and goat cheese.
  5. Bake in 400° oven until crust is golden and cheese is slightly melted, about 10-12 minutes.

Semi-dried tomatoes can be used in many recipes, especially ones with pasta. Try Roma tomatoes - bake for about 2 hours. Tomatoes can be kept in a tightly sealed jar, covered in olive oil, in the refrigerator for about a week.
