Goat Cheese Pizza
Wonderful for using up the last bits of vegetables in the fridge.
1 package pizza dough mix
10 grape or cherry tomatoes, halved
2 oz. mushrooms, sliced
1/4 onion, roughly chopped
1/4 red pepper, roughly chopped
4 oz. goat cheese, crumbled
small handful fresh basil leaves, roughly chopped
olive oil
freshly ground salt & pepper
-
Oil baking sheet and place tomatoes, cut side
up, on sheet. Spray with olive oil, then season with pepper
and bake in 250° oven or toaster oven for 45 minutes to
an hour.
-
Make pizza dough according to package directions
-
Heat olive oil in frying pan over medium heat
and saute mushrooms, onion and red pepper until soft.
-
Top pizza dough with mushrooms, onions, pepper,
and tomatoes, then top with basil and goat cheese.
-
Bake in 400° oven until crust is golden
and cheese is slightly melted, about 10-12 minutes.
Semi-dried tomatoes can be used in many recipes, especially ones
with pasta. Try Roma tomatoes - bake for about 2 hours. Tomatoes
can be kept in a tightly sealed jar, covered in olive oil, in the
refrigerator for about a week.
