This is a nuevo Cubano dish inspired by a trip to a fantastic Cuban restaurant in Manhattan Beach, CA, called Little Havana. Serve this with Lime-Tomato Relish, Nuevo Beans & Rice, and Mango-Rum Puree over vanilla ice cream for dessert.
4 boneless skinless chicken breasts OR 1 chunk of extra-firm tofu cut into 4 piece
Marinade: 1/2 cup golden rum 1/4 cup canola oil 1 Tbs. freshly-squeezed lime juice 1 1/2 tsp. pomegrante molasses 1/4 tsp. white pepper
