Granola Bars
These granola bars are very hearty and very filling, but
not too sweet. If you're going for sweet, though, substitute
mini chocolate chips or M&Ms for up to 3/4 cups of the
dried fruit.
1/4 cup multigrain or whole wheat flour
2 cups mixed dried fruit, chopped into small pieces
1/2 cup chopped unsalted roasted nuts
1/3 cup honey
4 cups "mixed" un- or very little sweetened cereal
(one of those where the company mixes in all their leftovers
- anything except granola)
4 eggs or egg replacement
1 tsp. cinnamon

Preheat oven to 350° and spray 9"x11"
baking pan with oil.

Toss fruit pieces with flour to coat and
separate.

Mix together all ingredients, except eggs.

Mix in beaten eggs.

Spread evenly in pan, then immediately
put in the oven.

Bake for 30-40 minutes, covering the top
with aluminum foil if it begins to brown too much.

Let cool, then slice into 15 slices.
To store them, slice, then wrap each bar individually in plastic
wrap. Chuck them all into a freezer bag and freeze. They're
great frozen or thawed.
