Kick-Ass Chili

Don't be put off by the list of ingredients - this vegetarian chili is easy to make.

1 small yellow onion, chopped
1 sweet red pepper, chopped
1 tsp. olive oil
8 oz. vegetarian beef crumbles
8 oz.vegetarian Italian sausage, chopped
15 oz. can kidney beans
8 oz. can tomato sauce
2 14.5 oz. cans diced tomatoes
3 Tbs. chili powder

  1. In large saucepan, heat olive oil over low heat. Add onions to pan and cok until almost translucent, but not browned.
  2. Add peppers to pan and cook until peppers are softened and onions are completely translucent.
  3. Add remaining ingredients and stir well. Cook over low heat for 1-2 hours until the flavors are blended.
  • For best results, cook in a slowcooker on low for 6-8 hours.
  • Vegetarian Italian sausage can be found in the freezer section of most grocery stores - look for the Boca brand. Click here to find out where you can fnd Boca products near you.   • You can, of course, make this with real meat. Just be sure to brown it before you add it to the rest of the ingredients.
