This is a nuevo Cubano dish inspired by a trip to a fantastic Cuban restaurant in Manhattan Beach, CA, called Little Havana. Serve this over Golden Chicken (or Tofu) with Nuevo Beans & Rice and Mango-Rum Puree over vanilla ice cream for dessert.
3/4 cup tomato, seeded and chopped 1/2 cup green bell pepper, seeded and chopped 2 Tbs. fresh cilantro, chopped 1 Tbs. freshly-squeezed lime juice 1/4 tsp. freshly ground black pepper
