Mango Bread

1 1/4 cup white flour
1 cup whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 cup butter
3 eggs or egg replacer
3/4 cup raw sugar (or regular sugar)
1/2 cup unsweetened applesauce
2 1/2 cups chopped fresh or frozen mango or mixed tropical fruits
1/2 cup coconut

  • Mix together flours, baking soda, cinnamon, and salt and set aside.
  • Cream the butter, then beat in the eggs and sugar.
  • Beat in the applesauce.
  • Mix in the flour mixture.
  • Fold in the fruit and coconut.
  • Spread the mixture into a greased loaf pan or 2 muffin tins. Bake at 350° for 40-50 minutes for bread or 10-13 minutes for muffins, until a toothpick inserted in the center comes out clean.
