Mango-Rum Puree

This is a nuevo Cubano dish inspired by a trip to a fantastic Cuban restaurant in Manhattan Beach, CA, called Little Havana. Serve this with Golden Chicken (or Tofu), Lime-Tomato Relish, and Nuevo Beans & Rice.

1 mango
2 tsp vanilla sugar
1 tsp golden rum

  1. Peel and cube mango.
  2. In food processor, puree all ingredients.
  3. Serve over vanilla ice cream or a tropical fruit salad
