Palmito-Alcachofra Dip

A quick and easy dip inspired by a Brazilian dish, hence the Portuguese name. It's incredibly low-fat, so eat as much as you want.

16 oz. hearts of palm drained
14 oz. artichoke hearts in water, drained
1 cup low or no fat cottage cheese
2 cloves garlic, minced
freshly ground salt & pepper

  1. In food processor, blend hearts of palm, artichoke hearts, cottage cheese, and garlic until smooth.
  2. Add pepper and salt to taste (be careful with the salt - hearts of palm are usually pretty salty to begin with) and prrocess again.
  3. Refrigerate for at least one hour prior to serving to allow flavors to blend.

Serve with crackers or crostini. Can be served warm or cold.
