Palmito-Alcachofra Dip
A
quick and easy dip inspired by a Brazilian dish, hence the Portuguese
name. It's incredibly low-fat, so eat as much as you want.
16 oz. hearts of palm drained
14 oz. artichoke hearts in water, drained
1 cup low or no fat cottage cheese
2 cloves garlic, minced
freshly ground salt & pepper
- In food processor, blend hearts of palm, artichoke hearts, cottage
cheese, and garlic until smooth.
- Add pepper and salt to taste (be careful with the salt - hearts
of palm are usually pretty salty to begin with) and prrocess again.
- Refrigerate for at least one hour prior to serving to allow
flavors to blend.
Serve with crackers or crostini. Can be served warm or cold.
