Paradise Ice Cream

A very easy ice cream to make whether or not you have an ice cream maker.

1/3 cup white rum
1/3 cup turbinado/raw sugar
2 limes
1/3 cup shredded coconut
14 oz. light coconut milk

  1. In a small saucepan, heat rum and sugar over low heat until the sugar dissolves. Chill until cold.
  2. Finely grate the zest from the two limes and squeeze out the juice.
  3. To the chilled sugar-rum syrup, add the lime zest and juice, coconut, and coconut milk.
  4. Freeze in ice-cream maker, following the manufacturer's instructions, or pour into covered freezer-proof container and freeze until solid, mixing 3 times to break up the ice crystals.
  • Garnish with curls of lime peel or toasted coconut.
  • For a more coconut-y flavor, use Malibu rum on place of white rum.
