Paradise Ice Cream
A
very easy ice cream to make whether or not you have an ice cream
maker.
1/3 cup white rum
1/3 cup turbinado/raw sugar
2 limes
1/3 cup shredded coconut
14 oz. light coconut milk
- In a small saucepan, heat rum and sugar over low heat until
the sugar dissolves. Chill until cold.
- Finely grate the zest from the two limes and squeeze out the
juice.
- To the chilled sugar-rum syrup, add the lime zest and juice,
coconut, and coconut milk.
- Freeze in ice-cream maker, following the manufacturer's instructions,
or pour into covered freezer-proof container and freeze until
solid, mixing 3 times to break up the ice crystals.
- Garnish with curls of lime peel or toasted coconut.
- For a more coconut-y flavor, use Malibu rum on place of white
rum.
