Pomagranate Portabellas

A tasty and unusual way to serve portabellas.

2 Tbsp. pomegranate molasses
1/2 cup canola oil
1/4 cup lemon juice
2 tsp. salt
1 tsp. crushed red pepper
1 tsp. cumin
4 cloves garlic, minced
4 portabella mushrooms

  1. Clean mushrooms with a damp towel and remove stalks if woody. Slice mushrooms into 1/2" slices and lay in casserole dish.
  2. Mix together remaining ingredients and pour over mushrooms.
  3. Marinate for at least an hour and then grill until mushrooms are tender.
  • Pomegranate molasses can be found in middle eastern grocery stores or in well-stocked grocery stores.
  • This is also a good marinade for chicken breasts. Slice four chicken breasts into 3/4" slices and proceed as for the mushrooms.
