Salsa Fresca

2 cups chopped tomatoes
1 cup chopped peppers (green, red, orange, or yellow or any combination thereof)
1/4 cup chopped white onion or scallions (for a milder flavor)
1/8 cup red wine vinegar
2 cloves garlic
1/4 cup fresh cilantro (or 2 tablesoons dried)
salt to taste

  1. Combine all ingredients & mix well. Allow flavors to blend for at least 1 hour before serving.
