Fresh Tomato Lemon Sauce
For my stepfather, who has recently had to go on a low-sodium
diet. After shopping with my mom this weekend and seeing how much
sodium is in stuff, especially pasta sauce, I decided to see what
I could make on my own. I came up with this.
Ingredients
1 Tbsp olive oil
1 small white onion, chopped
2 red sweet peppers, chopped
1 lb tomatoes, chopped
3 cloves garlic, minced
1 Tbsp fresh sage, minced
1 Tbsp fresh flat-leaf parsley, minced
1/2 tsp fresh-ground black pepper
1/4 tsp crushed hot red pepper flakes
1 tsp lemon juice
Directions
- Heat olive oil in medium saucepan over medium heat. Add onions
and cook until they become transparent.
- Add red peppers and cook until they begin to soften.
- Add all remaining ingredients except for lemon juice. Reduce
heat to low and cook until reduced by half (about 40 minutes),
stirring frequently.
- Turn off heat and stir in lemon juice.
This is even better the next day.
