Fresh Tomato Lemon Sauce

For my stepfather, who has recently had to go on a low-sodium diet. After shopping with my mom this weekend and seeing how much sodium is in stuff, especially pasta sauce, I decided to see what I could make on my own. I came up with this.

Ingredients

1 Tbsp olive oil
1 small white onion, chopped
2 red sweet peppers, chopped
1 lb tomatoes, chopped
3 cloves garlic, minced
1 Tbsp fresh sage, minced
1 Tbsp fresh flat-leaf parsley, minced
1/2 tsp fresh-ground black pepper
1/4 tsp crushed hot red pepper flakes
1 tsp lemon juice

Directions

  1. Heat olive oil in medium saucepan over medium heat. Add onions and cook until they become transparent.
  2. Add red peppers and cook until they begin to soften.
  3. Add all remaining ingredients except for lemon juice. Reduce heat to low and cook until reduced by half (about 40 minutes), stirring frequently.
  4. Turn off heat and stir in lemon juice.

This is even better the next day.
