Ultra-quick Fresh Pasta Sauce
1 cup tomato, diced
1/2 cup green, red, orange, and/or yellow bell pepper, diced
1/4 cup chopped fresh basil, chives, oregano, rosemary, and/or
thyme
2 Tbs. balsamic vinegar
1 Tbs olive oil
- Mix all ingredients together in small saucepan.
- When your pasta water is put on to boil, begin to simmer sauce.
- Remove from heat when pasta is drained.
- Serve over pasta or tortellini - serves 2.
- If the sauce is too thin for your taste, strain and retain the
juices for another use or discard. 1/4 cup of sauce mixed with
8 oz. of cream cheese makes an excellent vegetable dip or pizza
topping.
