1 cup tomato, diced
1/2 cup green, red, orange, and/or yellow bell pepper, diced
1/4 cup chopped fresh basil, chives, oregano, rosemary, and/or
thyme
2 Tbs. balsamic vinegar
1 Tbs olive oil
Mix all ingredients together in small saucepan.
When your pasta water is put on to boil, begin to simmer sauce.
Remove from heat when pasta is drained.
Serve over pasta or tortellini - serves 2.
If the sauce is too thin for your taste, strain and retain the
juices for another use or discard. 1/4 cup of sauce mixed with
8 oz. of cream cheese makes an excellent vegetable dip or pizza
topping.
