Roasted red pepper dipping sauce
A tasty dipping sauce for just about anything. And it's good on veggies, too, and would probably be yummy on pasta, too!

Ingredients
2 jarred roasted red peppers, drainedDirections
2 Tbsp. honey
2 tsp. lime juice
2 tsp. canola oil
1/4 tsp. red pepper flakes
- Dice red peppers.
- Combine all ingredients in a small saucepan and bring to a boil.
- Reduce heat and simmer for five minutes.
- Serve as-is or blend together in the food processor

6 And you thought...
My red pepper sauce is:
2-3 Roasted Red Bell Peppers
Clove or two or roasted garlic (more if you like it strong)
1/4 c. or so of cooked garbanzo beans (too thicken)
Couple of capers
Couple of pitted Katamala olives
Couple of toasted pine nuts
Some fresh basil
Olive oil to blend
Sea salt (or Grey Salt) and cracked black pepper to taste
Smidge or lime, lemon juice or blood orange
Blend all together - add basil last with citrus to prevent darkening
Great over pasta, blend in risotto, blend fine with creme for dipping or a creme sauce, add tomatoes and leave chunky for bruschetta, or add crushed red peppers for kick

Lee Ann: The spinach dip wasn't so good as to merit a recipe. Give me a few more tries on it. And I definitely need to figure out how to make it in smaller quantities!!!
Sorry I don't have exact measurments - I just don't cook that way ;0)
