Tofu pups in blankets
I made tofu pups in blankets for our lunch for our trip to the zoo last weekend. While we didn't get to eat them at the zoo, the pups in blankets were pretty tasty (the blanket is Trader Joe's garlic herb pizza dough - yum!). I froze some of them for lunches, and they're making their debut today.
You're looking at rice with peppers, onions, and black beans with my sundried tomato, roasted red pepper, and olive dip from the other day (I love dips that can wear many culinary hats!); veggies; tofu pups and ketchup; and grapes and a smidge of dried fruit.
